About this dish
Borscht is the soup most people think of first in Eastern European cooking: deep red from beetroot, gently sweet and sour, and different in every family that makes it. Ours is cooked with beef, potatoes, carrots and tomatoes and finished with fresh herbs.
It is traditionally served with a spoonful of sour cream and something to dip. Choose rye bread, white Moskovsky bread or pampushka — the soft buns that belong with borscht — or add a few pirozhki.
