About this dish
Pozharsky cutlets are a nineteenth-century Russian classic: chicken cutlets coated in breadcrumbs and cooked until crisp. The name comes from the Pozharsky inn in Torzhok, on the old road between Moscow and St Petersburg, where travellers are said to have stopped for them.
Choose your side: mashed or pan-fried potato, buckwheat, rice, pasta, draniki, zucchini oladi, grilled vegetables or grilled asparagus.
