About this dish
Ptichye moloko — "bird's milk" — is one of the great Soviet cakes, said to have been created at the Praga restaurant in Moscow in the late 1970s, when people queued for it. It is an airy white soufflé on vanilla sponge under a thin dark chocolate glaze.
