About this dish
Shuba — "herring under a fur coat" — is a layered salad of pickled herring under potato, carrot, egg and onion, traditionally crowned with grated beetroot that turns the whole dish a deep violet. With Olivier, it is one of the two salads that define a Russian New Year table.
Sweet, salty and creamy in the same forkful, it is best eaten cold with dark rye bread.
