Solyanka is a hearty Russian soup built on smoked meats and pickles — salty, sour and rich at once, the bowl Russians reach for on a cold day or after a long night. Ours is made with smoked chicken and beef sausages, pickled cucumbers and olives, with lemon to sharpen it.
Add sour cream to soften the tang, and rye bread or pampushka on the side.
